Вижу, что есть даже целая книжка "The Mammalian Jaw: A Mechanical Analysis" (автор начал с исследования ископаемых антилоп, но распространился на всех млекопитающих). Вообще, ископаемые челюсти и зубы в них теперь исследуют очень масштабно, с точнейшими трёхмерными моделями и с анализом мельчайших деталей формы. Направление жевания - это сравнительно просто в общем потоке зубных открытий.
В прошлом веке учёные придумывали хитрые уздечки с инструментами для измерения движения коровьих челюстей, и спорили о том, какая лучше, а сейчас они отдыхают с покадровой обработкой видео. Современные статьи, если я правильно понял стадии, описывают более сложное движение, чем просто по кругу. Но, так или иначе, современная наука чётко установила, что коровы всех национальностей страшно далеки от лево-правой симметрии.
